Chia seeds contain up to 38% fats, 18% to 23% proteins, about 40% carbohydrates and vitamins A, niacin, thiamine, riboflavin and folic acid. In addition, the minerals calcium, phosphorus, potassium, zinc and copper and antioxidants are included. Chia seeds contain only little sodium. Normal and white seeds differ slightly in nutrient content.
With a protein content of more than 16 grams of protein per 100 grams, chia seeds exceed cereals such as wheat, with a relatively high value of vegetable protein.
